How to make vazhakkai bajji at home

Vazhakkai Bajji / Valaikai bajji is a
popular tea time snack which is served with chutney. Sliced Plantains are given
a thin coating of spicy masala batter and then fried in hot oil. The resulting
taste is simply stunning. It is a very easy and quick recipe which can
be done within 10 to 15 minutes. Raw banana fritters (vazhaikai bajji) are
quite popular in south India.
It is a great snack for the perfect rainy day.

Ingredients
1 plantain/raw banana1 cup besan flour
1/4 cup rice flour
2 tsp chilli powder
A pinch of red colour kesari powder
Cooking oil for frying
Salt to taste
1 cup water

Method
1.
In a mixing bowl,
mix gram flour, rice flour, red chilli powder, salt and a pinch of red colour
kesari powder.
2. Add water little by little and mix well with a whisk and make a thick batter. The batter should easily coat the vazhakkai, not too thick.
3. Peel off the skin of the plantain with a peeler or if you are
comfortable with a knife. Slice them thin or medium thick as you wish using
knife or a slicer. Keep it immersed in water until use.
4. Heat oil in kadai/wok side by
side. Take it out from water, drain the water as much as you can, dip and coat
the vazhakkai and drop carefully in hot oil.
5. Fry them both sides until golden brown. Adjust the heat now and then to
avoid fuming of oil. Also using the ladle keep pouring the hot oil over the
bajjis as its getting cooked to make it puff nicely.
6. Take it out and drain in paper
towels.
