Egg masala gravy recipe , a
simple, quick, flavorful, hot and delicious egg gravy that pairs well as a side
with plain basmati rice, biryani, chapati, PARATHA and pulao. It also goes well
with any tiffen recipes like idli, dosa, idiyappam, aapam, etc.
There are numerous ways an
egg gravy is made in India. Each home and region may have a different recipe. I
make egg gravy in so many ways. The egg masala recipe shared here will yield
you a very delicious, aromatic and moderately spicy dish.
INGREDIENTS
Boiled eggs-3
Onion-2
Tomato-3
Ginger and Garlic-Finely Chopped-1 tsp
Green chilly-1
Curry leaves-Few
Mustard seeds-1 tsp
Turmeric powder-1/4 tsp
Cumin powder-1/2 tsp
Coriander powder-2 tsp
Chilli powder-1 1/2 tsp
Oil-4 tsp
Salt-To taste
Coriander leaves-chopped-handful
INSTRUCTIONS
1.   
Heat a wok/kadai, add 4 tsp oil.
2.   
When the oil is hot enough, add 1 tsp mustard seeds.
3.   
Then add some curry leaves and let it splutter.
4.   
Then add finely chopped ginger and garlic pieces.
5.   
Then add green chilly by slitting it into two.
6.   
Add finely chopped onion and fry until it becomes brown.
7.   
Then add finely chopped tomatoes. Add salt to taste.
8.   
When tomatoes are soft enough, add 1/2 cup water to it. Now
add 1/4 tsp turmeric powder, 1/2 tsp cumin powder, 2 tsp coriander powder and 1
1/2 tsp red chilli powder.
9.   
Boil the mixture by covering it for 7-8 minutes.
10. 
Now add the boiled eggs by cutting it into halves. Do not
mix.
11. 
Cover and cook until a thick gravy is formed.
12. 
Garnish with a handful of finely chopped coriander leaves and
serve hot. Enjoy
