Crispy Wheat Roll
Crispy wheat roll is prepared from whole wheat flour as
outer covering, filled with a sweet coconut mixture. This is similar to the
bakarwadi recipe, but with much simple ingredients and a quick snack  which is not deep fried, even though crispy
and crunchy in every bite.
INGREDIENTS
·        
Wheat flour-2 cups
·        
Grated coconut-1 cup
·        
Jaggery-1/2 cup
·        
Corn flour-3 tsp
·        
Maida-2 tsp
·        
Turmeric powder- a pinch
·        
Cardamom powder-a pinch
·        
Ghee-2 tsp
·        
Salt-a pinch
·        
Oil-to fry
INSTRUCTIONS
1.      
In a large mixing bowl, add wheat flour, salt,
oil and water.
2.      
Knead 
into soft dough, just like chapathi dough. Keep it aside.
3.      
Heat a wok, add 2 tsp ghee, then cardamom powder
and grated coconut.
4.      
When coconut turns aromatic add powdered jiggery
and mix until the mixture thickens.
5.      
In another bowl, add corn flour, maida, turmeric
powder and water, mix into thin batter without any lumps.
6.      
Roll out the chapathi dough in a rectangular
shape and spread the coconut mixture.
7.      
Roll it spirally and cut into pieces of equal
size.
8.      
Dip it in corn, maida mixture and then shallow
fry in a pan.
9.      
Fry all the sides until it turns out crispy.
10.  
Serve with tea or coffee.
