HOW TO PREPARE VEG NOODLES FROM STRING HOPPERS/IDIYAPPAM
Noodles are everyone's favourite recipe.
The best thing about noodles is, it goes well with all food items like
vegetables, mushroom, egg, chicken, etc. Apart from maida, noodles also come in
wheat flour. But today, we will see home made noodles preparation with rice
flour[idiyappam/string hoppers] and how it goes well with vegetables. All kinds
of noodles are sauted with soy sauce, vinegar or lemon juice and pepper powder
to get a flavoued aroma and taste.
INGREDIENTS
Idiyappam/String hoppers-4
Onion-1 sliced
Green capsicum-1 sliced
Carrot-1/2 sliced
Cabbage-1 cup sliced
Cauliflower-1/2 cup, fried
Ginger and garlic- 1 tsp, finely chopped
Green chilly-2, finely chopped
Oil-3 tsp
Salt-To taste
Pepper powder-1 tsp
Soy sauce-2 tsp
Vinegar-1 tsp[or lemon juice]
Spring onion-1 tsp

INSTRUCTIONS

1.    In a kadai[or wok], add 3 tsp mustard[or any]oil and let it
heat.
2.    Once the oil is hot, add finely chopped ginger and garlic,
approximately 1 tsp.
3.    Next add 1 big sliced onion and saute until it becomes
transparent.
4.    Now add sliced carrots, green capsicum and shredded cabbage.
Saute them for few minutes. Add salt as per your taste.
5.    Then add fried cauliflower pieces and mix well.
6.    Add 2 tsp thick soy sauce and saute it.
7.    Then add 1 tsp vinegar[or lemon juice].
8.    Next add 1 tsp pepper powder[1 tsp chilli sauce or chilli
powder, if you want more spice]
9.    Mix everything together, now add the string hoppers[or
idiyappam] and mix well.
10.  When everything comes together sprinkle some spring onions
and serve hot.

Enjoy it with tomato ketchup
or tomato sauce.
