Sponge cake recipes are very common baked cake recipes and are made with
just vanilla flavour. But can also be made with different kind of flavours as
an additional agent to the traditional sponge cake recipes. One such easy and
simple sponge cake variation is the mango cake recipe made with a generous
amount of mango flavour.

INGREDIENTS

  • 1 cup mangocubes
  • ¾ cup 180 grams sugar
  • ½ cup curd
  • ½ cup (120 ml) oil/ butter
  • 2 cup (280 grams) maida / plain flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • ¼ tsp salt, skip if salted butter is used.
  • ¼ cup (60 ml) milk

INSTRUCTIONS

  1. In a blender take 1 cup mango,
    butter, curd and ¾ cup sugar.
  2. Blend to smooth puree dissolving sugar
    completely.
  3. Transfer the mango puree into large
    bowl.
  4. Mix well making sure everything is
    well combined.
  5. Now place a sieve and add 2 cup
    maida, 1 tsp baking powder, ¼ tsp baking soda and ¼ tsp salt.
  6. Mix well using cut and fold method.
  7. Now add ¼ cup milk and mix until
    the batter is combined well.
  8. Now transfer the cake batter to a cake
    mould . Make sure to line a butter paper at the bottom to prevent from
    sticking or else grease with oil and dust with flour.
  9. And also tap twice to level up
    uniformly and remove any air bubbles if present.
  10. Place the cake pan into preheated
    cooker/kadai.
  11. Cover and cook on a medium flame for
    40-45 minutes.
  12. Insert a toothpick and check if the
    cake has baked completely.
  13. Cool the cake and then unmould the
    mango cake.
  14. Enjoy eggless mango cake as it is or
    decorate with frosting.
