VEGETABLE ROLL
Vegetable Chapati Rolls is a scrumptious roll recipe that is healthy as well as stomach filling. This easy-to-make recipe is loaded with the goodness of carrot, cabbage, cucumber, onion, potatoes, chilies, chapati, ginger and a melange of spices. This roll recipe will be great for your kids lunch box and will also be perfect to take along with you on road trips and picnics with your friends and family.
Usually vegetable rolls are prepared in all purpose flour, filled with vegetables and are deep fried, that makes a crispy snack. But today, we will learn how to make vegetable spring roll in a much healthy way, which is prepared from wheat flour or atta and are not fried.
INGREDIENTS
• 8 chapatis/8 spring roll sheets
• 2 pinches turmeric
• 2 tablespoon refined oil
• 4 potato
• 2 tablespoon coriander leaves
• 1/2 teaspoon salt
• 1 inch ginger
• 1 cup carrot sliced
• 1 cup cabbage sliced
• 1 cup cucumber sliced
• 1 cup onion sliced
• 1 teaspoon chaat masala
• 2 green chilli
• 1 teaspoon cumin powder
• 1 teaspoon chilli powder
• ½ teaspoon garam masala
• ½ tsp coriander powder
• Green chutney-1/2 cup
• Tomato sauce-1/2 cup
• Mayonaisse or white sauce
INSTRUCTIONS
1. In a bowl add 2 cupsof wheat flour and make chapathis and keep it ready.
2. In case if you use spring roll sheets then roast it in ghee/ butter and keep it ready.
3. Add 2 tsp oil in a kadai, then add chopped ginger and green chilli.
4. Next add turmeric powder,coriander powder,chilli powder,garama masala and chaat masala. Add salt to taste and mix.
5. Add boiled and mashed potatoes and mix well.
6. In a blender, add 1 cup mint leaves, 3 green chillies, ginger piece and salt. Blend it to a smooth paste. Green chutney ready.
7. Beat 1 cup curd and add green chutney to it. Add salt and mix well. Green sauce ready.
8. Slice carrots, onion, cabbage and coriander leaves.
9. Assemble the roll by spreading green sauce all over the chapatti.
10. Keep 2 tsp potato stuffing followed by 1 tsp mayonnaise or white sauce.
11. Sprinkle some sliced carrots,onion,cucumber and cabbage pieces.
12. Add 1 tsp tomato sauce on top.
13. Sprinkle some chopped coriander leaves and chaat masala on top.
14. Roll everything carefully. Tasty vegetable roll is ready. Enjoy.
